Grown on very high altitudes, this Sidamo coffee has been prepared following the Grade I procedures, meaning that the producers are paying particular attention to the cherry selection, washing and drying processes.
The average size of the coffee farms in this area is less than 1 hectare, which means less than 1,500 trees, resulting in approximately 150-200 kg of green beans per grower. On a daily basis, hundreds of these smallholders deliver their cherries to Bulega washing station, a communal wetmill in Nensebo privately owned by Israel Degfa. Here, the cherries are first hand-sorted, separating ripe cherries from unripe or overmature ones, in order to get a sweeter and cleaner outcome. They are then soaked in fresh, clean water for 12-24 hours, before reaching the African beds, where they will be sundried over a period of 12-15 days.
